Corn 101: It’s In Everything!

There is so much information regarding corn, and many of its accompanying issues, that I feel are important to share. As this is just the beginning of sorting through and compiling this information in a relatively organized format, where lies the best starting point is yet to be determined.

Yesterday was Christmas. The holidays are traditionally spent sharing time with others surrounded by food. This holiday season, in particular, has left me feeling very validated with regards for the need of heightened awareness around corn as an allergen.

To give a little more background on the situation currently, my daughter Autumn (age 9), is leaps and bounds healthier now that we have settled in to a corn free lifestyle. As it is a very tough diet to follow thoroughly, she does fantastic most of the time. We continue to treat the allergic response on an as needed basis and pay very close attention to triggers, as to not allow the corn to build back up in her system.

The holidays have been an opportunity to share what we have learned so far. Those close to Autumn can definitely recognize a change in her skin, body and energy level. Therefore, opportunities of gathering, surrounded by food, made for plenty of conversation regarding corn and the lifestyle adjustments necessary to keep a healthy kid.

A common theme I have found is most people seem to know or agree that ‘corn is in EVERYTHING’. When I share that tidbit, people seem to respond with ‘yes, I know, it is in everything’. And then the conversation leads into some of the well known derivatives, such as corn syrup and high fructose corn syrup. Or corn meal. And men seem to know the relation to the overuse of corn by way of ethanol in our gas (which is a whole other subject on the impact of the pervasive kernel). But the reality of corn being in MOST EVERYTHING is so under-understood!

It is the fact that corn is so widely overused in this country, and just as deeply hidden in our food and personal care products that I feel it is so immensely important that it gain recognition as an allergen and require mandatory labeling.

Corn is off the radar! As ‘gluten-free’ gains momentum by the masses, (and even the FDA) corn is slyly sitting back filling in the gluten gaps, anonymously on ingredient labels picking up its own speed. Well in the lead of ingredients that are grossly overused, with a safe seat in the blind spot on all food labels, well hidden even to the most conscientious consumer. With an estimated 150-200 derivatives of corn that are labeled with ZERO TRANSPARENCY, those with a corn allergy are hard pressed to find safe ground when it comes to eating. Can I say that again….. there are well over 100 different ingredients commonly found on food, beauty and medicine labels that contain corn. And these ingredients require no outward exposure claiming to be derived from corn. That means when scouring an ingredient label to ensure it is safe to eat, we are very hard pressed to know with 100% certainty.

Is this making sense? Click here to view the list of ingredients that are most likely derivatives of corn. Then, for kicks, check in your pantry and see if you can find many (or any) corn free items. One of my favorites is the McCormick’s 100% pure vanilla extract. Just look.

As a parent of an otherwise very healthy kid, this has been a curve ball, sucker punch out of left field. I’m good, we are good now. We are. In fact, I have begun to see it as a blessing… perspective is everything. But for 2+ years we were totally in the dark. In the pitch dark of the night. In that time, we have learned a lot and gone through a big lifestyle change. Now we are ready to share what we know. And more importantly, we hope to have some influence in raising awareness around corn as an allergen and its obscene overuse in our country.
